Sweet, Sweet Friday: Very Cherry Coconut Bars

I just wanted to send out a quick recipe for one of my all time favorite lighter desserts.

Very Cherry Coconut Bars             Serves 30

2 weight watchers points

2 item(s) egg
1 cup(s) sugar
1 1/4 cup(s) all-purpose flour
1/2 tsp baking powder
1 tsp vanilla extract and/or 1 tsp almond extract
1/4 tsp table salt
8 oz maraschino cherries, 1 cup, chopped and drained
1/2 cup(s) butter, softened
1 cup(s) packaged shredded coconut
1 Tbsp Cherry Extract

Take a close look. Bask in how much coconut and cherry you can see. Take it all in. Then, wipe your drool and start thinking if you have the ingredients to make these already. I bet you do…I’ll wait while you go look…

1. Heat your oven to 350 F then grease 8- or 9-inch square pan.
2. In medium bowl, mix 1 cup of flour, the butter, and powdered sugar with spoon until flour is moistened. Press to form a bottom layer in your pan. Bake 10 minutes.
3. In medium bowl, beat eggs. Stir in remaining ingredients. Spread gooey cherry coconut filling over baked cookie bottom.
4. Bake 25 to 30 minutes or until golden brown. Cool completely. For bars, cut into 6 rows by 5 rows. Makes 30 bars.
